Sabudana Vada / Crispy Sago Vada
Sabudana Vada is a very popular snack food among Maharashtrians but now widely enjoyed among the other parts of the country as well, eaten normally during their fast days / vrat / upwas especially during Navaratri Vrat. It’s very simple and nutritious made with very less ingredients like Sago/Sabudana, Boiled Potato, Ground Peanuts. These Sabudana vadas can be served as a snack or an appetizer.
Sabudana Vada is served along with spicy green chutney / sweetened curd / yogurt cilantro chutney with hot chai / tea. They are crispy on the outer and soft in the inner and look somewhat like potato patties, also very popular food during monsoon season. Although it is deep fried, it is sumptuous and light and does not contain onion and garlic.

Sabudana Vada / Crispy Sago Vada

Ingredients
- 1 ½ Cup Sabudana
- 2 nos Potatoes
- ½ Cup Peanuts roasted and coarsely ground
- 2 nos Green Chillies Finely Chopped
- Salt to taste
- 1 tsp of lemon
Instructions
To Prepare Sabudana / Sago Vada follow the below steps:

Soak Sabudana/sago overnight (i.e. 5 to 6 hours) in little water, just enough to cover the sabudana. Drain any excess water from the sabudana. Boil the potato and peel them when they are cool and keep it aside.

Dry roast the peanuts and remove the husk. Grind the roasted peanuts to a coarse powder and add it to the soaked Sabudana. Add mashed potato along with diced green chilli, salt, lemon and mix well.

Make small balls with this mixture and flatten them a bit and set aside.

Fry these flattened patties in the hot oil, until they turn golden brown. Sabudana vadas are ready now.

Serve the sabudana vadas plain or with ketchup / with spicy green chutney / sweetened curd / yogurt cilantro chutney / Tamarind Chutney , and a hot cup of tea or coffee.

I’ve never heard of these before, but they sound like a great snack to replace potato chips. I think the fact that you roast the peanuts first would bring a lot of flavour to the dish.
