Semolina Chickpea Flour Cutlets With Green Mango Chutney

Since it is made of raw mangoes and a combination of fresh coconut its sweet and sour and gives the right taste when combined with semolina chickpea cutlets. If you do not have fresh coconut one can use desiccated coconut as a replacement.
This green mango chutney is an authentic recipe from Andhra Pradesh, when I was making the cutlets could not figure what I would serve with, I found these raw mangoes I had bought were sitting in the refrigerator for a long time. So, decided to make this green mango chutney as an accompaniment along with the semolina chickpea flour cutlets.

Ingredients
- 1 cup Semolina/Sooji
- 1 cup Besan
- 1/2 tsp Salt
- ½ tsp Ajwain carrom seeds
- 1 Tbsp Oil
- 1 tsp cumin seeds
- 2 tsp Chopped green chillies
- 1 tsp Ginger garlic paste
- 1 tsp turmeric powder
- A pinch of Hing Asafoetida
- ½ tsp Garam Masala
- 1 tbsp Lemon juice
- 1/2 tsp Kasoori Methi Optional

In a big bowl add semolina and besan add salt and water mix it well. Make sure there are any lumps in the batter... The batter should be running consistency.

In a hard bottom Kadai heat up the oil and then add Ajwain (carrom seeds), cumin seeds, chopped green chillies, sauté them for a minute or two.

Then add ginger garlic paste and sauté till the raw smell is gone, then add turmeric powder, hing (Asafoetida), garam masala powder, mix well and add lemon juice finally add the Semolina batter in medium flame stir it vigorously.

Lastly, add kasoori methi and mix it well, if required add a little oil to the batter so that it does not stick to the Kadai. Now, the batter will start leaving the surface of the Kadai.

Now remove it to a plate and let it cool down for some time and then make balls and then bring them to the desired shape – make sure there are no cracks in the patties and pan fry them in oil.

Serve them with green mango chutney and enjoy !

Green Mango Chutney

Ingredients
- 2 nos Raw Mango Peeled & Diced
- 2 nos Green Chilli
- 1 Pinch of Hing
- 3 ½ tbsp of Fresh Coconut Roughly Chopped
- ¼ Cup Fresh Coriander Cleaned & Chopped
- 2 to 3 drops of Lemon
Tadka/Seasoning
- 1 tsp Cumin Seeds
- 1 Sprig Curry Leaves
- 1 tsp Oil
- ½ tsp Urad Dal

Wash the Raw Mangoes dry pat them.

Peel and Dice the Raw Mangoes.

Put all the ingredients mentioned above into a jar and grind it.

Remove the paste and take into a small serving bowl.

Take tadka/seasoning pan or any small pan that you normally use and heat the oil.

Then put all the ingredients in the mentioned order above and fry them for a second or two.

Now pour the tadka onto the chutney and enjoy it with your favourite dish.
