Description
Basically, idli milagai podi is a dry powder made with two to three different kinds of lentils and red chillies. In a typical milagai podi you find spiciness. I had been to a restaurant called “madra cafe” in Mumbai they serve something called podi idli i.e. nothing but idli tossed in idli podi and topped with ghee and served with coconut chutney and sambar.
This Milagai Podi / Powder is also widely used as an accompaniment for idli and dosa, which is why it is called idli & dosa chutney powder. The recipe may change region to region but the essence remains the same.
It can be kept in an airtight container for 7 months.
