Corn and Spinach Sandwich is Yummylicious !!!

A favourite snack of my daughter.  We all know how difficult it is to make them eat veggies – especially spinach.  For me this snack is nothing but healthy – brown bread, corn, spinach and some mayonnaise.  If you want you can add some cheese – grated or even a slice will go well.

And if you team this up with some soup – especially my tomato and carrot soup it could very well become a lunch offering – a meal.

It perfect for picnics or to carry it in lunch boxes.  Have taken this along on frequent family trips to the beach.  Have sent this for a classroom of kids – as a special day menu and believe me the feedback I got from the kids made me believe that I have sprouted a halo on my head J.  In fact the parents whatsup’d  me to get the recipe. And from that days on wards all the kids in my daughter class know that I am a cook.  Infact, I get compliments from the kids whenever I visit the school.  For what – all but a simple recipe of Corn & Spinach Sandwich !!!!!

Do try this… I am sure you will love it too.  It will not take more then 15 mins.  Grilled it.  Put cheese in for the Kids and wait for their reactions.

Ingredients

  • 4 Extra-large Bread Slices
  • Veg Mayonnaise to spread on the bread.
  • Butter to spread on bread

For Spinach Corn filling

  • 1.5 tbsp cooking oil.
  • 1 ½ tbsp all-purpose flour/wheat flour.
  • ½ cup warm milk more if the sauce is too thick.
  • 1 ½ cup spinach Cleaned Blanched and chopped.
  • 1 ½ tsp Ground Black pepper
  • 1 tsp of mixed herbs
  • 1 ½ cup corn cooked.

Instructions

Preparing the filling

  1. Heat the pan add the oil and add the cooked corn stir it for a minute or so. Add the chopped spinach and sauté it along till its blanched.
  2. Add the flour (which ever you choose too) and let it fry for a minute so the raw smell and flavour go away.
  3. Now add milk and the seasoning black pepper and mixed herbs and cook it till becomes a thick paste (as the sandwich will become soggy otherwise). Finally add salt and mix it nicely.

Grilling

  1. Take two slices and spread butter and mayonnaise equally on both breads. Meanwhile get the grill or tawa on the heat and get it ready.
  2. Take the filing and spread it generously over one slice of bread.
  3. Put the other slice on top and spread butter on top to get the crisp top. Keep in the grill and grill it till it done. If doing it on the tawa we will have grill it both the sides.

Recipe Notes

Enjoy the sandwich as breakfast with coffee or as snack. Have served it with Broccoli Soup for dinner yesterday …….!
