Aloo Methi
Who would not love simple cooking and less ingredients, Aloo Methi is one of those recipes, which only has 9 basic ingredients, and does not have very elaborate cooking process. Very ideal quick stir fry for students, working professionals and for others when in hurry, for nutritional and tasty side dish for chapati, roti and pulka.

Ingredients
Ingredients:
- 2 Cups Potatoes
- 1 cup Methi leaves Chopped
- 1- Inch Ginger Peeled & Diced
- ¾ tsp Jeera
- ¼ tsp Turmeric
- 1-2 Green Chilli
- ½ tsp Garam Masala
- Pinch of Hing
- Salt as needed
- Oil for Cooking
Instructions
Preparation:

Clean and pluck the Methi leaves and wash them thoroughly, this is optional but advisable to add 1 tsp. of salt 10 mins before making the dish, this helps in cleaning all the impurities of the leaves.

Peel and chop the potatoes in small cubes and store them in bowl of water to prevent them from changing their colour (oxidation process)
Method/Making Aloo Methi:

Heat oil in hard bottom pan and add jeera, green chillies, ginger and hing for minute or two.

Add the diced potatoes and turmeric and cook till the potatoes are almost done. Check the potatoes if they are cooked. At this stage add garam masala and stir the potatoes.

Put the washed and chopped Methi leaves into the pan and fry for some time.

Aloo Methi can served with chapati, pulka or any roti of your choice and enjoyed.
Recipe Notes
Note: When frying the potatoes, one can add water to fasten the process, personally would prefer to fry it with put water. Please do not over fry the Methi Leaves, it will taste bitter and also it will lose all the nutrition to the frying.
