Stuffed Brinjal/Bharwa Baingan
Bharwa Baingan is a one of a kind outlandish dish. Bharwa Baingan is a mouth-watering dish of little/baby brinjals, with a strongly seasoned stuffing of onion, coconut and lively flavours/spices.

Ingredients
- Brinjal/Baingan: ½ Kilo or 500 gms
- Onion: 1 small Chopped Finely
For Stuffing
- Groundnuts: ½ cup.
- Garam Masala: 1 tsp
- Chili Powder: 1 tsp
- Coriander Powder: 1 tsp
- Cumin Powder: 1 tsp
- Ginger Garlic: 1 tsp
- Turmeric Powder: ¼ tsp
- Dry Coconut: 1 tbsp.
For Preparation:
- Oil: 2 tbsps.
- Salt as required
- Coriander for Garnish

Preparing Stuffing:

Dry Roast the groundnuts for around 3 to 4 minutes, over low flame stirring continuously. Add the dry coconut coarsely grated and take them in a grinder and grind it coarsely into powder. Now add the spice powders i.e. garam masala, chili powder, cumin powder, turmeric powder, mix all the spices together and at this stage add ginger garlic paste. Mix it thoroughly and keep it aside.
Preparing Bharwa Baingan/Stuffed Brinjal:

Cut the top and end of each brinjal and make vertical slits of four in each brinjal. Don’t cut the bhindi into two equal halves. Take each one tsp filling/stuffing and stuff the brinjal/baingan with it.

Take heavy bottomed vessel and put the oil heat the oil and add the finely chopped onions and fry till they are translucent.

- Choose Pink and Small Brinjals, which will give you the desired results and taste.
- One could choose to add tamarind extract to bring in the extra zing.
