Avial – Classic Kerala Preparation

The very thought of Avial brings back fond childhood memories. Oh ! those days of fun and masti. Every day started with elaborate plans for the evening – how to fool your parent in giving you free hand time after school. Have broken many a windows and had many a fights and ruined many clothes with a dazzling batmen ship… In our minds we were all budding Kapil Dev’s, Sunil Gavaskar’s.
I distinctly remember eating this dish in my friend’s house – who was a Keralite. I did not know what it was called – but I liked it so much that my thoroughly pestered mom had to call his mom to find out the name of this dish. ‘Avail’ that’s the first time I heard the name. The Next time I had this was when I was on a business trip to Chennai – in a restaurant and the third time when one of my colleague – a genuinely kind hearted Tamilian could not help herself but treat me with her version of authentic dish after hearing me talk so much about it. Every single time that I’ve had Avial – it was of a different version. But in all its diversity – it still maintained the very essence of Kerala.
It is a very classic Kerala preparation. A delightful mix or rather a medley of different vegetables cooked in yogurt, grated coconut, cumin seeds and seasoned with coconut oil and curry leaves. Choose your choice of vegetable – for me I like the amalgamation of all – carrot, yam, pumpkin ( white/yellow) drumstick, snake gourd, potato, beans and more. This dish goes well with hot steamed rice.
There is a dry version and a gravy version. Either way it is very easy to stomach – and leaves a mark in your heart J

Avial – Classic Kerala Preparation
Nutritional Value: 195 Calories / Serving Fat 111 cal, Carbs 66 cal, Protein 18 cal
Ingredients
- 250 gms Assorted Vegetables Cut and Peeled
- 1 sprig Curry Leaves
- 1 tsp Turmeric Powder
- Coconut oil – as required
- Salt to taste
- 1/2 cup Yogurt
For Paste:
- 1 tsp Cumin Seeds – 1 tsp
- 1 cup Grated Coconut – 1 cup
- 2 nos Green Chilies – 2 nos
Instructions
How to Prepare Avial?

To begin with one could steam the vegetables and keep them aside.

Grind Green Chilies, Fresh Coconut and Cumin Seeds into thick and fine paste.

Take a frying pan and add coconut oil (any oil can be used)

Add the vegetables and stir fry them for a while.

To this mix Fresh Coconut and Cumin fine paste and then yogurt in line and give them nice mix.

Let it simmer for a couple of minutes adjust the seasoning i.e. salt.

Temper with Mustard and Curry leaves. Amazing aroma.

Serve it with steamed white rice amazing combination.
