Garlic & Broccoli Lo Mein

We were at the local super mart to buy some stuff for our house, my wife found eggless flat noodles and she picked them up and asked can you prepare something out this. So, I thought why not give it a try, then happened to come across a Lo Mein recipe on Facebook and thought this would be a perfect match for the noodles lying on the refrigerator for some time now 😊, the recipe was a Beef Lo Mein recipe, since the requirement was a vegetarian recipe tweaked the recipe to a vegetarian style.
For vegetable lo mein we can throw in any vegetable you want for the matter (I have used Carrot, broccoli, & tofu), it’s a tad different from the normal stir fry noodles you find in Chinese take away or restaurant. Normally lo mein is made out hand pulled eggless noodles, but if that’s not available we can use any noodles we fancy, even we can substitute it with spaghetti on worst case scenario 😊, all it matters is taste.
Making Lo Mein is not a lengthy process, nor it has any fancy or unusual ingredients which you do not have it in your shelf or in your local grocery store. Anybody has soy sauce in their house/refrigerator. A good soy sauce bottle and sesame oil if possible combo would do great and you have for yourselves a healthy and fresh home prepared Lo Mein in approximately 20 to 25 minutes time.
And just like that in quick toss of the pan we have reached the stage where in with the twirl of the forks on the shiny noodles and the pan glazed veggies we are already to ready to savour our tasty Lo Mein.
Let’s begin the journey of making the tasty Lo Mein :-

Garlic & Broccoli Lo Mein

Ingredients
- 1 Packet Flat Noodles Cooked and Drained
- 1 no Broccoli Flower Steamed and Drained
- 1 no Carrot Peeled & Grated
- 6 to 7 nos Garlic Pods
- 200 Gms Tofu Hard
- 2 tbsp Chilli Flakes
- 3 Tbsp Soy Sauce
- 1 tsp Hoisin Sauce Optional
- ½ Tsp Garlic Powder
- 1 ½ Tsp Pepper Crushed
- Salt to taste
- Oil for Stir Fry
- ½ tsp of Sesame Oil
Instructions
How to Make Garlic & Broccoli Lo Mein…..?

Noodles: Cook the noodles as per instructions on package and drain them and keep it aside. (Put ½ tsp sesame oil and toss them properly to avoid the noodles from sticking together)

Dice Broccoli into small florets and steam them till Al Dante (i.e. a bit under cooked)

Drain tofu and cut it into small cubes and keep it aside.

Sauce: Mix Soy Sauce, Chilli Flakes, Crushed Pepper, Hoisin Sauce (Optional), Garlic Powder and mix them thoroughly and keep it aside.
Preparation:

Heat oil in pan add tofu and stir fry for couple of seconds and keep it aside.

Now add steamed broccoli and stir fry them for a couple of seconds, till they get crisper in the oil for a minute or so.

Now add the cooked noodles and toss them for a minute or so. Now finally the prepared sauce and toss the noodles so they are fully coated with the sauce.

At the end add some salt as per taste and toss them and taste and adjust as required.
Recipe Notes
- Hoisin Sauce is Optional, one can use sesame oil instead also (have used neither of them, traditionally it is used).
- One can use their choice of vegetables like bell pepper, mushroom and also can add spring onions (white and the green portion can both be used).
- Have used normal salt, instead one can use ajinomto (Chinese salt) (Note: please be advised not suitable for kids and pregnant women, please use it with discretion).

Just what I was looking for! I have some flat white noodles – perhaps Thai? Can I use them thus, do you think?
Yeah you can use them, use sesame oil to toss them they will bring you more flavor to the noodles.
