Vegan Sweet Potato Chocolate Cupcakes
Seen many recipes of Vegan Sweet Potato Chocolate Cupcakes, had never thought we could make cup cake out of sweet potato. Thought why not give it try and decided will make with out any flour, milk, eggs or butter, healthy but tasty 😊. It’s been a journey in cooking my expedition 😊 trying out many things and getting into uncharted territories.
So, saw many recipes of Vegan Sweet Potato Chocolate Cupcake and made my own recipe and set out to try it out. The star ingredients here are sweet potato puree, oats flour and chia seeds. The result is amazing and unbelievable and you can see it for yourself.
These are healthy vegan sweet potato chocolate cupcakes, which contain far more nutrition and less sugar than our usual everyday cupcake we see, yet they taste every bit like a normal cupcake one would want them to.
And more so, sweet potatoes are an excellent source of beta-carotene (Vitamin A), not to mention loads of vitamin C, vitamin B6, potassium and dietary fiber to be top it off among other amazing nutrients and we have oats to add the fibre and protein.
The other star ingredient i.e. Oats, which have tried replacing the Refined flour is highly nutritious, rich with anti-oxidants, contains a powerful soluble fibre called “Beta-Glucan”. .so, all in all sweet potato cupcakes are highly nutritious and healthy to have. One can use oats flour if you get at your place, have finely grinded Quaker Oats to Powder and used them in the recipe for Vegan Sweet Potato Chocolate Cupcake.

Vegan Sweet Potato Chocolate Cupcakes

Ingredients
- 1 Cup Oats Flour Quaker Oats
- 2/3 Cup Sweet Potato Puree Boiled, Peeled & Mashed
- ¼ Cup Maple Syrup
- 2/3 Cup Cocoa Powder Unsweetened
- 2 tsp Chia Seeds Soaked in water for ½ to 1-hour min
- 2 tsp Vinegar
- ½ tsp Sodium Bi Carbonate
- ½ tsp Baking Powder
- 2 tsp Soya Milk Unsweetened
Instructions
How To make Vegan Sweet Potato Cupcakes?

Boil, Peel and Mash Sweet Potato and remove the knots and keep it aside let it cool.

Grind a Cup of oats and add all the dry items to it i.e. Coco Powder, Baking Powder, Sodium Bi Carbonate and mix all of them thoroughly.

Now add wet ingredients to the dry ingredients one by one slowly i.e. chia seeds (soaked in water), maple syrup, sweet potato puree, vinegar and mix all of them thoroughly and check for any dry lumps in the batter. Leave it to rest for

Now in the mean while put cupcake liners in the cupcake tray and preheat the oven at 190 0egrees and check the batter for its consistency, if not, then add a Tsp of soya milk and mix. Keep it aside for 5 to 10 minutes.

Put the batter in cupcake liners and bake them for 20 to 30 mins @ 190 Degrees. Check the cupcake if they are done, if they are not done keep them for tad bit more time and then cool them on wire rack and then serve them.
Recipe Notes
- See to that no knots are there in sweet potato puree.
- Optional One can put 1/4 cup of brown sugar/cane sugar.
- One can add 1 tsp vanilla essence to the batter if required.
