Mango Pickle (Instant pickle)

Normally when we refer to Indian pickle, we think of long duration of marination i.e. for 2 to 3 months or some pickles are marinated for 6 months or long. But that’s what get the pickle the taste. In India state to state pickle varies and have different flavours. Pickles are made out various fruits and vegetables too.

This pickle is instant version, made from raw mango. Its very simple but very tasty and goes with major rice preparations.

  • 1 Cup Raw Mango cubes diced into small cubes/pieces
  • ¼ tsp salt
  • ½ tsp Red Chilli Powder

For Tempering

  • ½ tsp Mustard
  • 3 to 4 nos Curry Leaves
  • ¼ tsp Hing
  • Oil for tempering


How to Make Mango Pickle (Instant pickle)

  1. First take the diced mango in bowl.
  2. Put the salt and red chilli powder and marinate it for 1 hour.
  3. We can see the mango salivating, at this stage take tempering pan and heat the oil and put all the items mention in the tempering list in order.
  4. Once the tempering is ready pour the same into marinated mango pieces.
  5. Toss the mixture and leave it for some time. It’s ready to be served.
