We had bought mango to make custard and fruit salad but changed my mind and made this mango & yogurt parfait. One thing its visually pleasing and tasty too, the combination mango and yogurt go really well. If you are tasting it for the first time it puts off, but you eventually start liking it. The taste still lingers on my tongue from what I had yesterday, as I am writing this blog post.

Mango Yogurt Parfait

Since its mango season thought making the best use of it. Making as many recipes you can i.e. desserts, salads, curries, pickles and dals. Had two options for the topping i.e. digestive biscuits crumbs and granola. So, went with the later and made it home made granola. After tasting the granola, fresh demand from my house they want it daily for breakfast………πŸ˜Šβ€¦..! So, yet another recipe for me i.e. Granola.

Its healthy dessert, sugar free, tasty, have used fresh mango pulp (made at home) no preserve and yogurt its totally combination to make it healthy, refreshing and out right delicious. It can be had for breakfast or lunch & dinner as a dessert.

Mango & Yogurt Parfait with Homemade Granola

Ingredients

  • 1 nos large ripe Mangoes cubed
  • 2 nos large ripe Mango pureed
  • 2 cups Curd
  • 4 tablespoons low-fat oats granola
  • 1 tsp Milk

Instructions

How to make the Mango Yogurt Parfait?

  1. Peel and cut two mangoes and grind them with pinch of Elachi powder and 1 tsp milk. Keep the puree aside.
  2. Beat the yogurt with a whisk and keep it aside.
  3. Take home made granola in cup.

Assembling:

  1. Take a glass which is plain, gently first layer it with the mango puree approximately 1 inch.
  2. Now layer the whisked yogurt on top gently.
  3. Now layer the granola on top gently. Layer the cubed mango pieces now.
  4. Refrigerate it for an hour and have it chilled.

Recipe Notes

Please do not refrigerate it more two to three hours, granola tends to become soggy it wont taste as it should. If the mangoes are not that sweet you can add a tsp sugar to balance the sweetness. Its optional.
